Eric is the campus food service director with over 30 years of experience in retail and contract service dining. Eric truly believes that food is medicine! He is passionate about wellness in both his personal life and his career. His goal is to promote healthy eating and to have high nutrient dense options through dining services on campus. Eric is passionate about keeping an open-door relationship with students, staff and administrators throughout the campus. One of Eric’s motivations for campus dining is that he has twin daughters currently in college. Eric was born in Philadelphia and has lived in many places including Atlanta. In his free time he lives an active lifestyle and has an interest for exercise, travel and motorcycles.

Helder Pedrosa joined Aladdin food in 2019. Helder offers 25 years of accomplished and diverse Food Service Management experience across multiple sectors in the Hospitality Industry: Higher Education, Government Services, Corporate B & I and Catering Operations. He has held Executive Chef positions in distinguished locations at Hilton Hotels, The U.S Department of Defense at the Pentagon, The State Department of the United States, The United States House of Representatives, and the Smithsonian Castle Museum. Helder brings a wealth of knowledge, culinary expertise, and a passion for elevating guest experiences in every account he works in. Helder is a graduate of The New York Restaurant School, where he studied Culinary Arts and Restaurant Management. Helder grew up in Newark, N.J., and has resided in Annapolis, Md., for the last 20 years. In his free time, Helder enjoys spending time with his 2 children, Zachary & Victoria.

Kellie Green graduated from Virginia State University with a BS in Hotel, Restaurant and Institutional Management. Her 20 years of experience in the hospitality industry started as a guest service agent and progressed to several catering management roles including Catering Sales Manager with Hilton Hotels, Senior Catering Manager at Georgetown University, Conference Service Manager at Venable Law Firm, Director of Catering at International Monetary Fund . Currently Kellie is the Director of Catering at Bowie State University. In her role, she plans events ranging from student government affairs, Presidential Signature Events to Homecoming and Commencement annual events ranging from 50-2,500 guest. Kellie is truly passionate about working with people and enjoys planning out catering event details and logistics with clients and customers. Through her vast experience in catering, Kellie is able to synergize her love for both good food and working with people. In her free time, she enjoys being with her husband and her two growing boys!

Oliver Hunter is the retail manager at Bowie State University. Oliver manages all of our retail locations such as The Pub, C-Store, and Bulldog Bites! He holds a food managers certification and 22 years of experience in the field. Oliver was born and raised in Washington, DC. In Oliver’s spare time, he enjoys cooking and spending time with his wife and his three kids!

Tyler Flanigan joined Aladdin food in 2018. Tyler offers 20 years of accomplished and diverse Food Service and Management experience across multiple sectors in the Hospitality Industry: Higher Education, Corporate Franchise Training, Retail and Beverage, and Mobile Food Operations; owning and operating a food truck specializing in Asian Fusion cuisine. He held the position of Supervisor of Dining Services at Dalton State College in Dalton, Georgia, before accepting the position of Executive Sous Chef at Bowie State University in July, 2019. Tyler brings a vast array of knowledge, culinary insight, and a passion for creating an exciting, engaged, and unforgettable guest experience. Tyler grew up in Forsyth, GA., and currently resides in Columbia, MD. In his free time, Tyler enjoys writing and playing music, recipe development, and outdoor adventure sports such as skydiving, and SCUBA diving.

Nelly is the catering chef and she has been working with catering at Bowie State University since 2004. She manages all catering events and always ensures that the food being served is beautifully presentable. She has had over 30 years of experience and has managed several catering companies, such as B&B catering and several other companies throughout Washington DC. Nelly even ran events in the White House for several presidential families such as the Clinton and Kennedy family. In Nelly’s free time, she likes to go shopping and spend time with family and friends.

Alexa is knowledgeable in all matters involving nutrition. She has her Master’s in Clinical Nutrition from Maryland University of Integrative Health and is a licensed dietitian nutritionist. Alexa has worked with hundreds of clients to help with weight loss, diabetes, high cholesterol, hypothyroidism and much more. Alexa ensures that there are healthy options on campus and meets with both students and faculty one on one. She would be happy to discuss anything wellness related! In her spare time, she enjoys hiking, photography and creating new healthy recipes.

Mia Henry is your Administrative Manager and she can assist you with almost any office task. You can find her throughout the dining hall overseeing daily office functions. Mia is excited to be back at Bowie State University as she is a second generation Bulldog. Mia was born and raised in Washington, DC. In her spare time, Mia runs a beauty business and spends time with her daughter.

Sheba is our catering coordinator and has 20 years of experience! She has assisted with many high profile events including National Prayer Breakfast , White House Correspondence Dinner and Washington Marti Gras. Sheba’s goal is to ensure that all of your catering needs are met and she can assist you with any questions you may have. Sheba was born in New Jersey and in her free time she enjoys being with her husband and grandchildren.
